DISTILLATION AND AGEING

Distillation

Grappa is produced by distilling grape pomace, a process that allows the aromatic compounds naturally present in grape skins to be extracted and enhanced.

Distillation is one of the most distinctive traditions of Italian winemaking culture, transforming grape pomace into a spirit with an intense and recognisable character.

Ageing

The subsequent ageing in oak barrels contributes to the evolution of the spirit, encouraging greater aromatic complexity and the development of nuances derived from contact with the wood.

During this process, the grappa's original character gradually becomes more layered, creating a richer and more refined expression.

TASTING NOTES

Appearance

Oak-aged grappas typically display golden hues and amber reflections, developed through contact with the wood during ageing.

On the Nose

The aromatic profile of oak-aged grappa may reveal notes of vanilla, sweet spices and delicate toasted nuances, intertwined with the original aromas of the spirit.

On the Palate

Ageing in oak can contribute to a rounder, more complex palate, combining the distinctive intensity of grappa with the flavours and sensations developed during maturation.

The Finish

Oak ageing encourages greater complexity, which may be expressed through a lingering, spicy and enveloping aromatic finish.

SERVING SUGGESTIONS

Casa di Terra Grappa Barricata is best enjoyed slowly, allowing time for its aromas to reveal themselves.

Ideal as a sipping spirit, it can be served at approximately 16–18°C, preferably in a tulip-shaped glass that allows its aromatic characteristics to be fully appreciated.

A perfect way to end a dinner or enjoy a special occasion, turning a simple tasting into a moment worth remembering.

FOOD PAIRINGS

Ideal with high-quality dark chocolate, traditional dry pastries and desserts made with dried fruit and nuts.

It can also be enjoyed on its own after a meal, allowing its aromatic nuances to take centre stage.
