Exposure: South - South West.

Soil type: sandy-clayey soils with the presence of skeleton             

Farming system: spurred monolateral cord.

Plant density: 5,600 plants/ha.

VINIFICATION AND AGING

Fermentation: in steel tanks with a temperature of 12 ºC for 15 days now a solution consisting of base wine is added, cane sugar, selected yeasts and mineral salts to carry out the fermentation process that will lead to the development of alcohol and carbon dioxide, then bubbles.

Aging: Second fermentation in bottle and subsequent aging in contact with its yeasts for 42 months, followed by another 2 months after disgorgement.

TASTING NOTES 

Our sparkling wine has a pretty intense yellow color, with a good perlage of fine grain. On the nose the first scent is those of bread crust, with light fruity and floral notes, especially white flowers. On the palate the first notes we hear are those fruity just enhanced by effervescence, has a good creaminess, has a good persistence

FOOD AND WINE PAIRING

Classic method sparkling wines are defined as wines for the whole meal, they adapt well to aperitifs, but also to appetizers. Sweet and delicate courses are preferred, for example, molluscs, crustaceans and fish. Also suitable for pasta and risotto with a good sweet or vegetable tendency. They can also be combined with both young and soft cheeses and even marbled.
